Mulch piled against a trunk holds moisture on bark and encourages girdling roots that can kill a maple twenty years later; the root flare should always be visible. Trenching or grade changes within the root zone do damage that does not show for years.
Nothing about a written scope is unusual to ask for: itemised work, material specifications, a plant schedule with species and sizes, what is excluded, a start window and payment terms. A contractor who resists putting those on paper is telling you something worth hearing.

Agreements should specify a trigger depth in writing, return passes during prolonged events, and de-icing material chosen by pavement temperature — standard rock salt stops working around 15°F, which happens repeatedly here.
Spring repair is part of the job. Gouged lawn edges and a dead strip of turf along the drive every April are signs the property was never staked and the salt rate was never calibrated. Both are avoidable and both should be put right by the contractor who caused them.
